Beef Burrito

Serves: 2

Time: Approximately 20 minutes

Back Country Cuisine Ingredients:

    • 1/2 cup Freeze Dried Beef Mince - 1/4 cup water (60ml) 
    • 1/4 cup Instant Rice - 1/3 cup water (80ml) 

Other Ingredients:

    • 2 tortilla wraps
    • 1/2 pack of your favourite taco spice mix or 2 tsp (found at your local supermarket)
    • 1 tsp dried oregano
    • 1/4 onion, thinly sliced
    • 1 small avocado, sliced
    • 1 tomato, diced (camping hack - place whole tomato in camp pot to prevent bruising)
    • 1/4 cup red kidney beans, rinsed and drained 
    • 4 tbsp mild tomato salsa
    • Pinch of dried chilli flakes (or if you're up for carrying a bottle of your muchly loved hot sauce, go for it)
    • 1/4 cup grated cheese (can use BCC)
    • 1/2 lime, quartered
    • 140ml Water
    • 1/2 cup lettuce, shredded (This is optional)

Method:

1. Put taco spice mix, oregano and ¼ cup boiling water into your Back Country Cuisine Beef Mince packet and set aside to re-hydrate for 10 to 15 minutes.

2. Put 1/3 cup boiling water in Back Country Cuisine Instant Rice packet and set aside to re-hydrate for 10 to 15 minutes.

3. To assemble burrito, lay tortilla wrap, top with ingredients, roll up to seal, and serve with a wedge of lime.

Tips:

On a multi-day hike you can take a spice kit, which you can use for several different meals. These come in handy when trying to cook with different flavours, carrying less on your back.

When not planning to use all beef and rice from packet, empty what you're not using into an airtight container and use the pouch for re-hydrating ingredients.
